Never have I ever gotten salmonella from eating raw cookie dough. (And if you have… I want to be friends 🤎)
That being said, sneaking bites of the chilled raw dough was always my favorite part of baking cookies!!
When I was younger, eating classic cookie dough always came with a sugar crash and, for me, a breakout. Between PCOS (now called PMOS) and acne-prone skin, I’ve learned that keeping my blood sugar balanced helps me feel my best. I’ll be sharing more tips about how I do that!
I recently made a better-for-you edible, no bake cookie dough I can happily eat by the spoon. I added vanilla protein powder and cashew butter for protein and healthy fats, which helps with the blood sugar balancing. It’s also refined sugar-free, but still satisfies my sweet tooth!
This cookie dough comes together in one bowl with a few simple ingredients (no baking required, which is the whole point).

Healthy No Bake Cookie Dough (gluten-free, dairy-free, refined sugar-free)
A protein-packed, edible no bake cookie dough made with simple ingredients that you can eat straight from the bowl. No baking required, naturally sweetened, and balanced with protein and healthy fats.

Ingredients
- 1 small-medium ripe banana
- 1/4 cup drippy cashew butter
- 2 tbsp vanilla protein powder (I use Truvani dairy-free vanilla)
- 2-3 tbsp coconut flour
- pinch of flaky sea salt
- dark chocolate chips or chunks (I use Hu for refined sugar-free)
Preparation
- Step 1: Mash the banana in a bowl until smooth, then stir in the cashew butter.
- Step 2: Add the protein powder, coconut flour, and salt. Stir until thick and cookie dough-like.
- Step 3: Let the mixture sit for 2-3 minutes so the coconut flour can absorb moisture and thicken. Add more coconut flour as needed until it reaches a thick, scoopable texture.
- Step 4: Fold in the chocolate chips.
- Step 5: Chill for at least 20 minutes in the fridge, then enjoy! Option to scoop into balls using an ice cream scoop or spoon. Serve chilled!
