If you love anything lemon blueberry flavored then you know that this combination of fresh and tart mixed with sweet and juicy leaves very little to be desired.
So when I came across this video for a chewy blueberry chip cookie I was immediately intrigued and literally jumped into the kitchen to make this one.
This recipe is easy to make and doesn’t require a stand mixer, or any face equipment. It does require you to source some wild blueberries which can be pretty pricey but I think it’s worth the splurge if you’re going to treat yourself.
I must admit, I am partially biased to these types of recipes as one of my favorite desserts in the whole entire world is the lemon blueberry cornmeal cookie from The Little Tart Bakery in Atlanta, GA. And the one thing that stands out most about that cookie is its chewiness. If you’ve ever made cookies with fruit (or cookies in general) then you know how easy it is to make a cakey cookie and how challenging it can be to create a truly chewy treat.
I am happy to report back however that these cookies are actually chewy (due to us cooking out most of the water from our delicious blueberry compote).

LEMON BLUEBERRY CHIP COOKIE RECIPE
(makes 8 large cookies)
INGREDIENTS
for lemon sugar
- zest of 1 lemon
- 1/4 cup of sugar
- Combine this together using your hands and enjoy the experience. Sit aside.
** ** ** NOTE: if you want your cookies to be less sweet but still have the lemony flavor you may omit the lemon sugar coating all together. Instead, zest 1-2 lemons and place in the sugar for the sugar cookie base.
for blueberry compote
- 3/4 cup of frozen wild blueberries( PLEASE use wild blueberries because they are smaller and taste better. I use this brand of frozen blueberries. Use regular blueberries at your own risk…)
- 2 tablespoons of sugar( you may add less sugar or no sugar if you want your cookies to have a stronger blueberry taste or be less sweet)
- juice of half a lemon( size doesn’t matter, this isn’t an exact science here use the same lemon you zested above)
- 1 teaspoon of vanilla extract
- Make the blueberry compote first because it will need to sit in the fridge to cool while you work on the cookies.
- Add all the above ingredients into a non-stick saucepan/small pot. This will be sticky and hard to clean once it dries just fyi reason I recommend non-stick.
- Place on medium high heat until you get a nice roaring simmer. Cook for about 15 minutes or so or until the steam coming from the mixture starts to less, the bubbles become larger and slower to form and pop. This is how we will know we’ve cooked almost all of the moisture out of the compote (and how our cookies won’t be cakey).
- Place warm mixture in a bowl and place in fridge while we work on the cookies.
Sugar Cookie Base
- 113g (1 stick) of unsalted butter ( very soft, room temp)
- 200g (1 scant cup) granulated sugar ( *may add lemon zest here if not using lemon sugar coating)
- 1 large egg, room temperature
- 3/4 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 185g (1 1/2 cups) all-purpose flour
- Cream together butter, sugar, egg, salt and vanilla until smooth. ( You can use a spatula or a whisk but if you use a whisk do NOT over whisk otherwise your cookies may be cakey).
- Add in baking soda using a flexible spatula until just combined.
- Add in flour using a flexible spatula until just combined.
- Add in your blueberry compote to the sugar cookie dough.
- Do this by simply placing dollops of the compote on top of the surface of the dough. Take a butter knife and zig zag through the compote a few times to incorporate it with the dough.
- Scoop dough into balls. Roll gently into round balls using your hands.
I used a #20 cookie scoop and got exactly 8 dough balls. - Place dough balls in fridge while you preheat oven to 350 degrees F.
- Line light-colored baking sheet with parchment paper.
- Remove balls from fridge. Roll the balls into the lemon sugar (if using) and then place on the baking sheet.
- These will spread out so give them enough room and do not overcrowd the sheet.
- Bake until golden on the edges and just starting to get some color on the tops. Check at about 15 minutes if you make large balls (earlier if you like an underbaked cookie). Check them around 10 minutes if you make smaller balls.
- Once the cookies have puffed up in the middle and are golden on the edges they are done. You may pull them from the oven and tap the sheet on the counter to begin the deflation process. They will deflate on their own over time. Once they cool you will have chewy cookies. Enjoy!
