Summer has officially arrived, and I couldn't be happier. Long days, warm evenings, fresh berries, ice cream, and every excuse to fire up the grill—this season is packed with delicious possibilities. Whether you're celebrating Father's Day with family, heading to a potluck, or simply looking for something tasty to enjoy on the patio, I've rounded up some of my favorite summer recipes to help you make the most of the season.
Gluten Free Eispalatschinken
Let’s start with an Austrian Classic - Gluten Free Eispalatschinken. Palatschinken are similar to crepes or thin pancakes. Palatschinken are easy to make and can be served with a variety of sweet or savory fillings, making them a versatile option for breakfast, brunch, or even dessert. You can serve them with just a thin layer of your favorite jam, hazelnut chocolate spread OR turn them into Eispalatschinken with a generous scoop of homemade vanilla no churn ice cream, homemade fudge sauce, whipped cream, and if you feel very fancy, some sprinkles.
(You can also use leftover Palatschinken and add them to Fritattensuppe - Austrian Pancake Soup)
Gluten Free Brownie Affogato
Did past you (brilliantly) stash a few gluten free brownies in the freezer so future you could enjoy them as a Gluten Free Brownie Affogato? If not, this is your sign. A rich brownie, a scoop of your favorite vanilla ice cream, and a shot of hot espresso poured over the top - c hef’s kiss. It’s the kind of dessert that feels fancy but takes five minutes to throw together. No oven required, and absolutely worth the freezer real estate.
